In the kitchen, the chef loves to demonstrate his passion for local produce, inventing original recipes that highlight the colours and savours of the Mediterranean in his simple and unpretentious style.
He employs a rich and diverse palette of flavours along with perfect food and wine pairings, all inspired by his love of the region, and the people who bring out the best in it and are happy to share it... Our eatery was awarded the "Distinguished restaurant" label from Logis de France and is listed in the Michelin, Bottin Gourmand and Gault & Millau guides.

Our chef has devised an à la carte and set menus which make no secret of his abiding affection for seafood and Catalan cuisine.

His finds inspiration in the people he meets in life and the surprising discoveries that unfold from these encounters. Positively convinced that great food comes from great ingredients, he meets the fisherman at the docks in Port-Vendres when the boat returns with the finest Mediterranean seafood on board. Another daily ritual, he greets the grocer bright and early as he displays his fruit and vegetables still moist from the morning dew.

Jean Sannac and son Brice welcomed chef Michel Védrines to join the hotel team in spring 2017. After more than 25 years at the helm of the kitchens at the Villa Duflot in Perpignan, the executive chef decided to weigh anchor at the shores of the sandy Elmes creek for a fresh adventure and to share his appetite for beautiful culinary experiences!



The chef will take you on a culinary journey in our dining room, bathed in natural light, where the ambience strikes a balance of classic and contemporary. All our tables are round, in a variety of sizes, to encourage a friendly atmosphere. Available for hire, the modular room can be divided to create more intimacy for smaller gatherings.

Open daily, all year round, serving lunch from 12 pm to 1.45 pm and dinner from 7 pm to 9 pm (9.30 pm in summer).




From the heated veranda in winter, you will never tire of gazing out at sea which changes every day at the whim of the winds.
In summer, the sunny terrace opens out onto the creek. The large bay windows look out across the Mediterranean affording a panoramic vista—so sweeping in fact that you almost can’t tell whether you are on land or at sea.

My inventive style of fine dining was greatly influenced by this setting. It is inspired by passionate local producers who supply seasonal ingredients using ethical farming practices.

The à la carte and set menus devised by myself vary apace with the ripening of the fruit and vegetables grown in these parts. It’s an absolute pleasure to cook with this regional produce which stimulates my imagination to create original dishes packed with colours and flavours.

We have crafted a finely nuanced and balanced wine menu in which Collioure and Banyuls AOCs and bottles from Côtes du Roussillon and Pays Catalan are listed alongside great growths from around France and more exclusive  wines we are delighted to offer you.

Our sommelier has picked out a comprehensive selection of red, rosé and white wines as well as natural sweet wines. Young, complex and intense wines with pronounced aromas as well as older and more sophisticated wines. He will also be there to advise you on the perfect wines to accompany your courses unless you prefer to be guided by your instinct.

Open from June to September, Le Casot is our summer café which, for the lunch and the dinner, serves a selection of light dishes including tomato and mozzarella salad, melon and cured ham and other classics.

Or why not be tempted by one of the grilled specialities from the barbecue. Cocktails and other beverages can also be enjoyed around the pool.

Since spring 2019, we look forward to welcoming you to our new pool area in the surroundings of our Mediterranean garden.

Open daily from 11 am to 10 pm, from 1 June to 15 September.

The lounge is a sanctuary inside the hotel and simply made for relaxation. Grab a book or magazine from the hotel’s full library and find a spot in front of the fireplace to get the most out of this snug and inviting space.

Open from 10 am to 11 pm, you have plenty of time to sample one of the many Banyuls great growth wines sold by the glass which have earned the local terroir a global reputation.
